Chocolate Cake
Ingredients: 125g chopped butter, 1 cup milk, 1/2 teaspoon baking soda, 2 cups plain flour, 2 teaspoons baking powder, 1/4 cup cocoa, 3/4 cup sugar, 1 teaspoon vanilla essence and 2 eggs
Step 1: Preheat the oven to 180'C / 350'F / gas mark 4. Grease a 20cm diameter tin. Line the base with baking paper.
Step 2: Place the butter and milk in a saucepan. Stir over a low heat until the butter is melted. Remove from the heat. Stir in the baking soda. Leave to cool for ten minutes.
Step 3: Sift the flour, baking powder and cocoa into a large bowl. Stir in the sugar.
Step 4: Whisk the essence and eggs into the cooled butter mixture. Pour the butter mixture over the flour. mix lightly until the ingredients are combined.
Step 5: Transfer the mixture to the tin. Bake for 45 minutes. Leave the cake in the tin for 5 minutes, then turn onto a wire rack to cool.
Step 6: when the cake is cool spread with icing
Carrot Cake
Ingredients: 3/4 cup canola oil, 1 cup firmly packed brown sugar, 3 eggs, 2 cups plain flour, 2 teaspoons baking powder,1/2 teaspoon baking soda, 1 teaspoon cinnamon, 3 cups firmly packed grated carrot, 1/2 cup chopped walnuts
Step 1: Preheat oven to 180'C / 350'F / gas mark 4. Grease a 20cm round cake tin. Line the base with baking papper.
Step 2: Beat the oil, sugar and eggs with an electric mixer for 5 minuter or until thick.
Step 3: Sift the flour, baking powder,baking soda and cinnamon.
Step 4: Fold the carrot and walnuts into the egg mixture. Lastly fold in the dry ingredients.
Step 5: Place the mixture in the cake tin. Bake for 1 hour or until a skewer pusher into the center of the cake comes out clean. Stand the cake in the tin for 10 minutes before turning it out onto a wire rack to cool.
Step 6: When cold, ice the cake. If you like sprinkle with walnuts, pumpkin seeds and dried pineapple or rockmelon.
Banana Cake
Ingredients: 125g softened butter, 3/4 cup sugar 2 eggs, 1 1/2 cups mashed ripe banana, 1 teaspoon baking soda, 2 tablespoons warm milk, 2 cups plain flour, 1 teaspoon baking powder
Step 1: Preheat oven to 180'C / 350'F / gas mark 4. GRease a 20cm round cake tin. Line the base with baking paper.
Step 2: Using an electric mixer beat the butter and sugar until light and creamy. Add the eggs one at a time, beating well after each addition.
Step 3:Add the mashed banana and mix thoroughly. Stir the baking soda into the warm milk and add to the creamed mixture. To warm the milk place in a small microwave-proof container. Heat on high power for 10 seconds.
Step 4: Sift the baking powder. Fold into the banana mixture.
Step 5: Transfer to the cake tin. Bake for 50 minutes or until a skewerpushed into the center of the cake comes out clean. Leave the cake in the cake tin for 10 minutes before turning it out onto a wire rack to cool.
