Ingredients: 200g softened butter, 1/2 cup sugar, 1 1/4 cups plain flour, 1/4 cup cocoa, 2 cups cornflakes, walnuts (optional)
Step 1: Preheat the oven to 180'C / 350'F / gas mark 4. Grease 2 oven trays.
Step 2: Beat the butter and sugar until light and creamy. Sift the flour and cocoa. stir into the butter mixture.
Step 3: Fold in the cornflakes.
Step 4: Spoon mounds of the mixture onto the oven trays, gently pressing the mixture together.
Step 5: Bake for 15 minutes or until set. Transfer to a wire rack to cool.
Step 6: when cold ice with chocolate icing and decorate with walnut.
Chocolate brownies
Ingredients: 175g chopped butter, 250g dark chocolate broken into pieces, 1 1/2 cups plain flour, 1 cup sugar, 2 teaspoons vanilla essence, 3 beaten eggs, 1 cup chopped walnuts (optional), icing sugar to dust.
Step 1: Preheat oven to 180'C / 350'F / gas mark 4. Grease a 20cm square tin. Line the base with baking papper.
Step 2: Place the butter and chocolate in a medium saucepan. Stir constantly over a low heat untill mealted. Remove from heat.
Step 3: Stir in the flour, sugar, vanilla essence, eggs and walnuts. pour the mixture into the tin.
Step 4: Bake for 40 minutes (the surface should be slightly cracked).
Step 5: Leave in the tin for 10 minutes before turning out onto a wire rack to cool. Cut into squares. Just before serving dust with icing sugar.
